Samba Rice Puttu 

INGREDIENTS

• Samba rice Flour - 1 cup
• Sugar - 2 tsp
• Salt a pinch

• Coconut Grated - 1/2 cup 
• Ghee - 1 tsp

Preparation:

• I used Store bought Puttu mix for making this Puttu, there are lot more brands available. I used Nirapara Puttu mix. Take 1 cup of Puttu mix in a mixing bowl
• Add a pinch of salt for taste. 
• Add hot water to the mix little by little. So you don't make the mix watery.
• Keep sprinkling the water till you reach the consistency.
• When you hold the Puttu flour it will hold the shape, when you drop it looses the shape. Thats the perfect consistency.  Always keep the mix covered with plate or wet tissue/towel
• I use the Charata(Coconut Shell) shaped Puttu maker. First layer will be coconut and then add 2 tbsp of Puttu mix
• Steam in the pressure for 1-2 mins. Don't over cook the Puttu
• Puttu can be served with Kadala Curry or Sugar & ghee
• Puttu is very quick and easy

PUZHIKUZHAMBHU PODI 

Ingredients :

Preparation : 

• First thing you have to do is, preheat the oven to 375 deg F. Because the oven should be hot enough when you put the batter inside.
• Then take a large bowl, add the bananas to mash. It will really taste good when the banana is nice and ripe.
• After you are done with the mashing, it is time to add butter, If the butter is in the room temperature will ad good texture to the cake. It is also ok if you melt it in the microwave.Mix well so it gets incorporated with the banana. 
• When the eggs are done add little vanilla essence or if you are lucky enough to have vanilla bean you can scrape it and add to the liquid ingredients . Stir well. 
• Now we can add sugar,  you can add regular white sugar or also brown sugar, and blend well.

Preparation:

• Soak dry fruits and nuts in grape juice for minimum 1- 2 days

• Make sugar caramel with 1/2 cup sugar and 1/4 cup water. 

• Powder the spices with 1/2 cup sugar to a fine powder

• Mix the wet ingredients - Egg, Vanilla, Caramelized Sugar

• Add the dry ingredients and the soaked fruits with the Juice. 

• Bake it at 350 F or 180 C for 45 minutes

• Plum cake is ready to be served

• It can be stored outside for 1-2 weeks

Important tips

1. You can boil the dried fruit and candied fruit, strain and use immediately if running low on time.
2. Alcohol can be substituted with any other dark grape juice or orange Juice.
3. Use the best quality dried fruits available.
4. Unglazed cakes can be shrink-wrapped and stored for up to one month in the fridge.

EASY AND QUICK MILKSHAKE

Ingredient :

Preparation :

• Take a Large bowl and Scoop the ice cream into the bowl.
• Now start using the whisk, to make the ice cream into a smooth liquid.
• Now it is time to add milk, vanilla essence and sugar.
• Mix everything together and make foam. 
• Cool it for few hours.

Serve it cold

CHOCOLATE MOLD BOWLS

Ingredient :

Preparation :

• To melt the candy, you can use a double boiler or melt in the microwave or, if you have the melting pot you can use it and melt the Wilton candy melts.
• I used the double boiler, how to make this is, you have to take a sauce pan with some water and boil in the stove. Over it, you can use a bowl which will lock in the sauce pan's mouth and add the melts in the bowl and keep stirring with some butter in it.
• The water that bowls will steam up and melt the chocolate in the bowl.
• Now it is ready to shape them in the mold. Before using the mold you have to clean the mold well and dry it. Now pour the melt in the bowl half full. You will have two trays to make a bowl, one is the bottom tray where you will pour the chocolate, the other is the one which will press them in the top to give the bowl shape. 
• Keep them in the refrigerator till you can see the chocolate is nice and shaped, now before you serve them with some fruit keep them in the freezer for like two minutes and then you can take it from the mold. 
• Slowly take them with out breaking. Now it is time to add fruits and serve it.

GARLIC / BUTTER NAAN

Ingredient :

Preparation :

• The dough should be fermented and only then we will get nice and spongy soft naan. So the first thing we are gonna do is to activate the yeast in a warm water. The water should be nice and warm, if it is hot then the yeast will die. So make sure the water is mild warm, add the yeast to the water and leave it for like ten minutes. Then you can see the foam in the water, that means the yeast is ready.
• Now take the All purpose flour in a big bowl and make a dent in the middle and start pouring the yeast with water. Then add sugar, salt, milk, oil and one egg in the dent.
• Now you can use a fork to beat the egg with the rest of the ingredient that is in the dent. When the liquid i nicely mixed, now you can make the dough.
• The dough should be nice and sticky only then we can make soft naan. As we are not using Tandoori pan, the sticky dough will help.
• Apply some oil in top of the dough and let it rest for like 15 minutes. Close the bowl a clean towel and place it in a warm place.
• Then when you see the dough it must be doubled in size, this is when you have to beat the dough a little and make balls out of it. Now let the balls sit for a while.
• Now you can preheat the oven at the highest, i did 500 deg Fahrenheit. 
• Now roll the balls and make a shape that you desire, and place it in the baking pan. You can place two at a time.
• Bake them for 2 minutes and then check if it is done, then turn it over and keep it for another 1 minute. Now the Naan is ready, apply some butter when it is hot. 
• For Garlic naan, you have to chop some garlic and top them in the naan, before cooking.
• If you don't have an oven, you can always do it in the stove top, you will get the same taste and texture. 

BLONDE BROWNIES

Ingredients : 

Preparation :

• Preheat the oven to 350 deg Fahrenheit. Grease a 9/9 baking pan or what ever baking pan you have is fine. If you want a thin layer then you can use a large rectangle pan too. 
• Now in a large bowl add the sifted flour, baking powder, baking soda and salt. Mix them together and then add the walnuts to the flour. This is why because when you add the walnuts to the flour, it will be coated with flour and will mix well in the dough will not go down in the an and settle. So that is the reason we mix it with flour to keep the walnuts every where in the brownies. 
• In another bowl add the melted butter, not too hot and then add the brown sugar. Mix them well. Now add the beaten egg to the brown sugar mixture. Mix them again and then add the vanilla extract. Now the wet ingredient is also ready.
• Now you can combine both wet and dry ingredient together to make a batter. 
• You can spread the batter in the greased pan, you can grease the pan with butter or use a foil or a parchment paper. Anything is fine. 
• After spreading the batter, you can top it with chocolate chip. 
• Bake the brownies for 20 - 25 minutes or till the tooth pick comes out clean when inserted in the center of the brownies. 

QUINOA PAYASAM/ QUINOA PUDDING

Preparation Time : 20 mins

Cooking time : 20 mins

Course : Dessert / Sweet

Main Ingredients : Quinoa.

Ingredients :

Quinoa - 1 cups

Jaggery - 1 cup (Shredded)

Cashew - 1/2 cup

Ghee - 5 Tbsp

Milk (Optional) - 1/2 cup

Pistachios - 3 nos 

Cardamom - 2

Preparation :

• In a sauce pan add 1.5 cups of water and turn on the heat. So it is like 1.5 cup for 1 cup of quinoa. Or you can follow the direction that is mentioned in the pack.
• Take a sieve with very tiny holes and wash the quinoa in the running water. All the dirt should be washed, or you can wait till the water is running clearly
• Now you can add to the pan,  It should be cooked well. Might be it will take like 15 mins approx. It will be nice and fluffy. Keep it aside.
• Then in another pan, Add ghee and saute cashews.  Take them out of the pan. Keep it aside.
• Now in the same pan add little water or till the jaggery is immersed and add the shredded jaggery and wait till it is fully mixed. Then with a strainer strain the syrup so if it has any dirt particles will be stuck t the strainer.
• Now you can add the Quinoa to the jaggery syrup and cook for a while.  Then add the cardamom powder. Let the quinoa be cooked little more with the syrup. It will not turn mushy but will be nice and soft wait till then.
• Now it is time to add milk to it. Cook it for few mins.
• Now garnish with Cashews and sliced pistachios.

Serve it hot.
