MALAI KOFTA

Kofta is a ball made of cooked vegetables. The kofta is delicate and flavorful. The gravy will complement the kofta.

Main Ingredients : Garbanzo 

Ingredients :

Potato boiled - 1 cup grated

Garbanzo cooked - 1 cup (mashed)

Green chilli - 3 nos

Cashew powder - 1/2 cup

Maida - 2 tbsp

Tomato - 1 cup chopped

Onion - 1/2 cup chopped

Ginger garlic chopped - 2 tbsp

Chilli powder - 2 tbsp

Malli powder - 2 tbsp

Jeera - 2 tbsp

Turmeric - 1 tbsp

Jeera powder - 1 tbsp

Salt to taste

Oil - 2 cups to fry

Preparation :

For Kofta

• Cook the Channa (Garbanzo)Drain all the water.
• Mash it in a bowl with grated potato.

• Add chilli powder, malli powder, Jeera powder and turmeric. (Nuts optional)
• Little salt. Make a good size ball or any shape.
• In another small bowl you can have maida just to coat the balls.

• Take a pan, heat it with oil to fry.

• Deep fry the balls and drain the oil in a tissue.

• Keep it aside.

OATS UPMA

Upma can be made with Ravai, Rice, Gothumai, Semolina. I tried all kinds of upma and wanted to try something different,  and then found this recipe.  Now a days all became so much conscious about health and switching to oats. So thought y not make an upma. And it tasted really good too. Health wise ya good but for kids it might be little difficult to chew. It s completely vegan,  because no milk or yogurt or cheese. So you can have it for breakfast or even dinner.  Really a good filler.

Main Ingredient : Old fashioned Oats 

Ingredients :

Oats - 2 cups

Green chili - 3 nos

Kayam a pinch

Peanuts - 1/2 cup

Channa dal - 1 tbsp

Mustard and urud dal - 1 tbsp

Curry leaves

Salt to taste

Preparation :

• In a pan add the rolled oats and saute it.
• When it turns little brown turn off the heat and keep the oats aside.
• In a pan, Add oil - mustard, urud dal, curry leaves.
• Now add peanuts and channa dal.
• Add chili to it.
• Now add the oats to it.
• Then add hot water and let it boil.
• Cook well. Add oil to get a nice consistency.
• Add salt to taste.

Serve it hot.

Green Spinach Rice

Just good for health simple and tasty.

Basmati Rice - 2 cups

Spinach - cooked and smashed 1 cup

For gravy :

Tomato  Chopped - 1 cup

Onion Chopped - 1 cup

Ginger ad Garlic chopped - 2 tbsp

Garam masala  - 1 tbsp

Green chili - 3 chopped

Mint leaves - Handful

Peas - Soaked 1 cup

Oil - 3 tbsp

Ghee - 2 tbsp

Seasoning :

Jeera - 1 tbsp

Cinnamon Stick - 1

Curry leaves Few

Onions for Raita

Salt as req 

Preparation :

Serve hot with Raita.
