I never tasted this kind of brownies before, i was introduced to this recipe from one of my friend. She made this lovely Brownies last week and it was just melting into my mouth. It was soft,chewy and delicious. I told her it was out of the world. And really wanted to try the recipe, so she shared the recipe with me. This recipe has a little twist, they didn't use normal white sugar, but the recipe has only brown sugar and so you get the chewy consistency. 

It has walnuts and chocolate chips in it, so kids will love to taste it, and my son was a great fan for this brownie. Its a very simple and yummy recipe. You can have this delicious brownies with a glass of milk.

Serve it after you make them into pieces.

Quinoa is really a new ingredient to me, and i am exploring more about it by reading so many food blogs. And i really love to have sweet in all my meal, but i don't actually. But today i really feel like having some sweet, so found this awesome quinoa pudding in a blog. And found it to be so yummy. This is a very simple and easy recipe. I have done this milk payasam with sugar and also Jaggery both will turn out really well. I have done payasam with rice, vermicelli, Basmathi, Lentils but this is a new try. 

So i cooked the quinoa separately and then added with the jaggery syrup. To add some crunchiness i added cashew and Pistachios. Kids loved it and was so excited to see the small tiny balls in that. You can make it into a thick Pudding or thin one by adding milk. I made it thin so it will be easy to drink. Now lets see how to make it....!!

This is one another cake but made it in the mug, i don't prefer using the microwave but once is fine. My daughter wants to make something for st. Patrick's day and so decided and made this quick recipe. She loves to bake, i don't know why and also she want the cookie or the cake to be done immediately after mixing the batter. And will start asking me "Mommy is it done yet" like 10 times. Then when it is out of the oven, she will start, "Can i eat it???" 

So i always prefer baking when she is at home, she loves to mix the batter and add the ingredients in the big bowl. And this is kind of so easy and simple recipe, prepare in the mug and keep it in the microwave for 2 mins and ta-da it is done!!!

Butter - 2 tbsp

Chocolate powder - 1 tsp

Milk - 2 tbsp

Egg - 1

Sugar - 1/4 cup

Vanilla Extract - 1 tsp

All purpose flour / Self rising Flour - 6 tbsp

Salt - a pinch

Frosting - 2 tbsp of vanilla frosting with, 1 drop of green food color 

• Just add all the ingredients in the mug and mix well. It is as simple as that. First this is to beat the egg well and then add all the ingredients.
• Place it in the microwave for 1 min first and then take them out and check the cake, if needed add 20 more secs to cook. It should not take more that 2 mins.
• Let it cool and then you can add the frosting on top of it.  The topping has to be done only after the cake is completely cooled.
• I made Vanilla frosting and added green food color for the topping.
• My daughter added some fruit loops as a garnish, you can add anything to it, even a small cherry will do.

Pancakes are my kids favorite. Here in Dublin they celebrate the St. Patrick's Day and they give Green pancakes in the parade. So then i thought how about i make it at home. So then came this recipe!! Kids love colors like then and when they relate to the festival they get more excited and eat the food. So i made this Green Pancakes at home simple for the color it was a great hit. 

So thought of sharing this recipe with you, Its just as same as you make the regular pancake but with a little twist in it by adding the color. You can get the pancake flour in the local store or you can also use the All purpose flour. 

And i served them with some leftover cheese frosting, it was just yummy!!

Main Ingredient : Pan cake flour

Pan Cake Flour - 2 cups

Milk - 1/2 cup

Banana - 1 Mashed

Green Food Color - 2 drops

Cinnamon - pinch

Egg - 1 (Optional)

I still remember the cycle with a box covered with glass all around, with packets of palkova. And the cost was 5, 10 and 20 Rupees. The five rupees pack will be small and 20 rupees will be more big. So every time we buy palkova from the street vendor and eat. I still remember the taste. It will be super awesome. But the color will be little more white than we make in the house. 

The special thing in this sweet is, it has only two ingredients. Nothing else is added to it. No nuts or Saffron or Ghee. Just Milk gives this kind of consistency and taste. The only thing in this recipe is the time, to reduce the milk it will take at least 1 hour. Because we cannot increase the heat to high or the milk will be burnt so we have to keep the flame in medium and cook the milk. You can store the Palkova in a airtight container for like a week in the refrigerator. It will be just awesome every time.

Preparation :

• In a heavy bottom pan, pour milk and keep the heat in low medium.
• Slowly keep stirring so it doesn't form lumps with milk skin.
• Keep the stirring in intervals till the milk reduces to 1 cup.
• Then to the rest of the milk add sugar, keep stirring and you can keep it for like 5 mins in the heat.
• Now turn off the heat.
• Let it cool down for few mins then you can serve it in a bowl.
• For four cups of milk you will get only one cup of palkova. So accordingly you can add milk next time. 

Serve it hot or cold

Very simple and easy Breakfast. Most of the days in the week, I used to take this for the breakfast. Very simple and also you can add nuts and fruits to enhance the taste. It is just perfect Breakfast.  I usually add walnuts and raisins to it, if i had any fruits i add. Like Bananas, strawberries, blueberries, Blackberries, Apples, nuts like almonds. You can chop all the fruits and add it to the oatmeal, such a refreshing Breakfast. 

So this time i really wanted a change and my kid also stared eating Oatmeal. You have flavors in the pack but you don't get Chocolate flavor so i just thought i can add some flavor to the plain oats. So I decided to add some chocolate powder to it and few chocolate chip to garnish. Was just awesome and my kid loved it. Yum!!!!

Oats - 1 packet (plain oats preferably)

Flax seed - 1 tbsp (Optional)

Milk - 1 cup

walnuts - 1 tbsp

Raisins - 1 tbsp

Chocolate Powder - 1 tbsp

Chocolate chip - Few

Preparation :

• In a bowl, add milk, flax seed  and oats. I used Microwave for like 3 mins to cook the Oatmeal.  
• When it is like two minutes you can open the microwave and add the chocolate powder to the oatmeal. Mix really well till it is nicely incorporated. After one more minute of cooking you can add the walnuts and the raisin. 
• It should be nice and mushy, then everything is cooked. Without cooking the oatmeal we should not and can not eat. 
• Yummy breakfast is ready.

I made a banana nut muffin, but this is something like that but with a little variations. The crumbs as a topping is really a nice crunch to the mouth. It is good as the banana is incorporated in the muffin and kids will love it. Lets see the recipe!!

Main Ingredients : All purpose flour & Banana

Banana - 3 mashed

All purpose flour : 2 cups

Baking soda - 1/2 tsp

Baking powder - 1/2 tsp

Salt - 1/2 Tsp

Sugar - 1 cup

Butter - 1/3 stick

Egg - 1 ( you can use substitute too)

Vanilla extract - 1 tsp

Crumb :

Brown sugar - 1/3 cup

Cinnamon powder- 1/8 tsp

Butter - 1 tbsp

All purpose flour - 2 tbsp

Turmeric Pepper milk is a beverage from South India made by boiling milk with turmeric and black pepper. I usually make this for Cold and cough. If you drink this every night when you have cold, you throat will feel good and relieved. I make it for me and my husband. Kids will hesitate a little to drink but you can ask them to take a sip or little more. I make it after dinner before we sleep. So the point is, the black pepper and the turmeric should be well incorporated in the milk and then be strained. So the milk will have the essence of those.

Main Ingredient : Turmeric powder and Black pepper

Milk - 1 glass (8 oz)

Turmeric Powder - 2 tsp

Black pepper - Crushed 2 tbsp

Sugar - 2 tbsp

• Take a sauce pan,  add milk to it. The heat should be in medium high.
• Add turmeric powder and black pepper to the milk.
• Now add sugar. Wait till the milk is reducing a little, keep stirring or it will start to boil.
• It will boil and raise, but keep stirring for a while. Turn the heat to low when it starts to boil. 
• When done strain the pepper and serve hot.
