CARROT PORIYAL


Poriyal means cooking or shallow frying the shredded or diced vegetables.. The preparation would normally involve frying mustard, split gram, onion and then main vegetable, adding spices to it. Shredded coconut will be added as a garnishing. Carrots are commonly made as Poriyal. It can be finely chopped or diced. Cooking is very easy and simple, pressure cook the vegetable or just cook it in the pan.

We can just cook carrot or even add one more vegetable with this like beans, peas, or even cabbage. In wedding in India, they used to add cabbage and carrot. It will so good, little amount of carrot diced and lots of finely chopped cabbage. It is very common poriyal in weddings in South India. So combining vegetables will give you a mixed taste and texture to the dish,will be very different too.

Main ingredient : Carrot

Ingredients :


Mustard and urud dal - 1 tbsp ( for seasoning )

Split chick pea/Channa dal - 1 tbsp

Carrot - 2 cups (chopped )

Red chili - 3

Coconut - 1/2 cup shredded

Oil - 1 tbsp

Salt to taste

Preparation :


  • Add oil to the pan, heat it. Add mustard seed, urud dal or split gram.
  • Then add channa dal or split chick pea, add red chili to the pan. This Split chick pea will add nice crunchy flavor to the dish, i always like to add some lentils with the vegetables, either split chick pea or Moong dal /split green gram.
  • After done, add chopped carrots to it. Close with the lid. Leave it to cook.(you can sprinkle little amount of water - optional)
  • After the carrots are cooked add little salt. Too cook the carrots you can do it in two different ways like one you can chop and put them in the pan and cook, or you can pressure cook the vegetables and then saute them with salt and spices. That will work too. But i did them by cooking in the pan, either ways is fine.
  • Add shredded coconut in the last, after adding the coconut do not cook.
Serve it with Rice or Chapathi.
