Veggie Patties
May 19, 2011VEGGIE PATTIES
I was carrying my second baby and i really don't know what to pack for my husband, it was hard for me to prepare in the morning and then send him to work. Because i had a three year old daughter to take care and didnt have any help. So i wanted an easy packing lunch recipe and also a good filler or he will stay hungry till the night. So decided and made this patty. Very yummy and delicious patties.
I will make this for a week and store it in the fridge and then will make them into a ball pat it down and then toast them in the Pan or a iron skillet and keep them in between the bun and pack his lunch. I found it so easy and also healthy for him too. It is not a usual one and also easy to eat. You can alternative with any thing like black chick pea, peas, cooked vegetable, paneer. Anything will work. If you are adding vegetables or paneer add potatoes with that so it will bind really well, or they will break apart. One of the easy and simple lunch recipe, you need not work every morning to pack his lunch. You can alter the taste and texture by adding onions, capsicum, nuts to it. That will be more nice and also fresh for them to eat in the afternoon. Let now go to the recipe!!!!

Cuisine : American (Indian Style)
Preparation time : 20 mins
Cooking time 20 mins
Course : Main
Main Ingredient : Kidney beans and Chick pea
Ingredients :
Rajma/ Kidney beans - 1 cup cooked
Channa/ Chick pea - 1 cup Cooked
Tomato - 1/2 cup Chopped
Onion - 1 cup Chopped
Green Chili - 6 slit
Ginger & Garlic - 1 tbsp chopped
Turmeric - 1 tsp
Chili powder - 1 tbsp
Coriander powder - 1 tbsp
Capsicum/ Peppers - cut 1/2 cup
Cumin/Jeera - 1 tbsp
Coriander leaves
Salt to taste
Preparation :
- First thing you have to do is cook the Kidney beans and Chick pea. You can cook together or cook them separately. It has to be really cooked in a way that it should be easily mash-able. You can mash with the potato masher or just with a spoon. You can do it when it is hot that will be easier.
- Now keep that aside and take a large pan, add little oil to the pan.
- Wait till the oil is hot enough and then add cumin,Wait till it splits and then add ginger garlic paste or you can even finely chop them and add to the pan.
- Now add onion and chili. Saute well.
- It is time to add little spice to the mixture. Add turmeric, coriander powder, chili powder(paprika Powder) to the mix. Blend well. Leave it for 2 mins. If needed you can add little water so that you don't burn the mix.
- When it is cooked add Kidney beans and Chick pea to it. Mix well.
- Peppers will cook fast so to retain the crunchiness you can add capsicum in the last. Add little salt to the mix.
- Garnish with Cilantro.
- Now after it is fully cooled you can store them in the refrigerator.
- If you want to make it, then make into balls of your size and press little and roast in a pan.
Serve it with a sauce as is, or but them in the bun and layer with onion, tomato and serve.
