Spinach Poriyal

SPINACH / KEERAI PORIYAL

Spinach can be handled in so many different ways, you can make it as a salad, as a sauce add them in curry, in sambhar or as a chopped and cooked poriyal. I have also made spinach chapathi by cooking the spinach and grinding it and adding with the Wheat flour.  I always want them to be added to some part of my meal. It is rich in iron and good for kids at their growing age. Its a very yummy and healthy food.

When I was in my childhood age, we had a lot of Spinach dishes in our meal. My grandma used to make  variety of dishes out of spinach and also we had so many varieties in spinach too, not just the salad spinach. As i am here in California i don't find many kinds. So when ever i go to India i try few of those Spinach dishes always.

Cuisine : South Indian

Preparation time : 15 mins

Cooking time : 10 mins

Course : Side dish

Main Ingredients : Spinach and coconut

Ingredients :

Spinach - washed and chopped 5 cups

Coconut - 1/2 cup shredded

Red chili - 2 nos

Mustard and Split urud dal - 1 tbsp

Salt to taste

Curry leaves few

Preparation :

  • So first thing you have to wash the spinach really well in a colander, and then let it stay in the colander for a while till it drips all the water.
  • Then in a large pan, add little oil mustard and split urud dal to it and wait till it crackles.
  • When it is done add the curry leaves and red chili. When you add curry leaves and red chili break it and pot them in the pan so we can get nice flavor in the dish.
  • Now all the spinach must be almost dry, so now you can chop them really nice and then add them to the pan.
  • You can close them with a lid for a while and then when you open it, you can see some water. Them leave them open for a while till all the water is evaporated. There is a small tip, you can add a pinch of sugar to retain the color of the spinach.
  • It is time to add salt and cook for few more mins, then it will be done.
  • Then after it is done add shredded coconut

Serve it with some rice
