When i tried this recipe, i saw so many videos and recipe blogs to make the this dosa nice and crispy. Then i found the batter should be really thin to make nice crispy dosai. And also the rice flour helps to make the dosa crispy. It is very good for health. And very easy to make.

Main Ingredient : Ragi Floor / Finger Millet Flour
Ingredients :
Ragi flour - 2 cups
Maida/ All purpose flour - 1 cup
Rice flour - 1/2 cup
Rice flour - 1/2 cup
Cashew - 5
Small onion - chopped 1/2 cup
Green chili - chopped 2 tbsp
Seasoning - Mustard and urud dal - 1 tbsp
Kayam(Aseofotida) powder a pinch
Curry leaves - few
Salt to taste
Oil - 2 tbsp
Preparation :
- Heat a pan add oil and then mustard and split black gram and curry leaves. Then add onion and green chili. Just let it cook for 1 min. Take of the heat. Then add the cashews, saute well.
- In another bowl, you can add all dry ingredients. Then to it the onions , green chili , cashew and mustard and split black gram with oil. Add water to make a thin batter.
- Add salt.
- Heat a dosa pan, Spray with oil, then make ragi dosa using the batter.
- Very important thing is Batter should be thin, It is not like making usual dosa, it should be poured in the Pan from outside to the center in a circular way. Don't spread it with your ladle it will not work that way.
- Only then u get a good crispy texture. Enjoy the dosa.
Serve it hot with Chutney
