VEGETABLE KORMA
Vegetable korma is a very mild yet flavorful. Korma is a traditionally meat or vegetables cooked with onions in a creamy coconut paste.

Main Ingredient : Vegetable

Ingredients :

Carrot - 1 cup

Potato - 1 cup

Peas - 1 cup ( u can use green beans too)

Onion - 1/2 cup

Green chillis - 3

Jeera - 1 tbsp

Sombu - 1 tbsp

Cardamom - 2

Cloves - 2

Ginger - 1 tbsp

Garlic - 1 tbsp

Bay leaves - 1

Star Anise - 1

Mint and Cilantro - few

Chilli powder : 1 tbsp

Turmeric - 1 Tbsp

Malli powder - 1 Tbsp

Salt to taste

Oil - 2 tbsp

To grind :

Tomato - 1/2 cup

Cashew - 5

Ginger garlic paste - 1 tbsp

Onion - 1/2 cup

Coconut - 1/3 cup

Preparation :

  • Pressure cook all vegetables. You can add little turmeric to it. (optional)
  • Heat a pan, add few drops of oil. Add jeera, sombu, star anise, bay leaves, cardamom, ginger, garlic and chillies.
  • After it is done, add onions to the pan. Saute well. Add cilantro and mint.
  • You can grind everything as said above and add to the pan.
  • Add chilli powder, malli powder, turmeric and let it boil.
  • Now add the cooked vegetable and add salt.
  • Garnish with cilantro.

Serve it hot with roti, naan, parota, chapathi, dosa.
