COCONUT MILK BRIYANI

This briyani was an innovation. I just had some left over coconut milk and then i wanted to finish it off. So added them into the rice and made this briyani and unfortunately it was tasting really good and everyone loved it. Asked for more, i was really impressed. Then started doing it regularly.

I always use Basmati rice for making briyani. Because it gives you a nice flavor and awesome texture. Basmati is a type of rice in India.

Course : Main Course

Main Ingredient : Veg, Basmati rice, Coconut milk

Ingredients :


For Masala :

Onion - 1 cup

Tomato - 1 cup

Green chili - 3 nos

Chili powder - 1 Tbsp

Turmeric - 1 Tbsp

Coriander Powder - 1 Tbsp

Garlic - 1 Tbsp

Ginger - 1 Tbsp

Cumin - 1 Tsp

Cinnamon - 1 stick

Cardamom - few

Bay leaf - 1

Clove - 2

Vegetables :

Carrot - 1/2 cup

Potato - 1/2 cup

Cauliflower - 1 cup

Green beans - 1/2 cup

Coconut milk - 1 cup

To garnish Mint and cilantro

For rice :

Basmati rice - 1 cup

Saffron - 1 Tsp

Mixed nuts

Oil to saute

Butter - 1 stick

Salt to taste

Preparation :


  • Soak the rice with saffron and few drops of veg oil. Let it be for 1 hour.
  • Heat a saute pan, add few drops of oil, saute all masala . Till the oil separates.
  • Add chopped veg into the masala. Do not add water.
  • You can add any kind of nuts to it (optional)
  • For basmati rice add one coconut milk and 1 cup of water .
  • Add every thing in a electric rice cooker, add salt.
  • Cut the butter and add over it, in the top.
  • Set your setting in the rice cooker and let it cook
  • Take out when it is Al dente.
  • You can garnish with Coriander leaves.
Serve it hot, with raitha or any dry curry
