BHAIGAN BHARTA

It is a eggplant cooked with spiced tomato. It is very popular dish in North India served with Roti.

Main Ingredient : Eggplant

Ingredients :

Eggplant - 1 chopped



Tomato - 1 chopped

Green chilli - 4 nos.

Cilantro - chopped 1/2 cup

Chilli powder - 1 tbsp

Coriander powder - 1 tbsp

Turmeric - 1 tsp

Jeera - 1 tbsp

Salt to taste

Preparation :

  • You have to wash the eggplant well and apply oil on it and keep in Oven for 5 mins in 250 deg.
  • Then peel of the skin and cut into small pieces.
  • In a kadai, add little and add jeera and chilli.
  • Now add tomato and all masala. Saute well.
  • Cook till tomato get soft.
  • Now add eggplant to the mix and stir till it blends.
  • Now add salt to it.
  • Garnish with cilantro.
Serve it hot with Roti.
