Christmas Plum Cake

Plum cake refers to a wide range of cakes made with either dried fruit or with fresh fruit. Most people prefer adding rum or brandy infused dried fruits in the cake while some may prefer to bake their cake without any alcohol. 

We know you can buy plum cakes from outside, but how about preparing it at home and making the Holiday extra special for you and your loved ones? For Soaking ( 2-3 days)
.5 cupTrail Mix
1 cupCherry
.5 cupDates
1 cupMixed Nuts (cashews, almonds, walnuts) 
2 CupGrape Juice
For Sugar Caramel

1/2 cupSugar
1/4 cupWater
1/2 cupHot Water


For Spice mix
Cloves
3  Cardamom
For Cake Batter
2 cup All purpose flour / Maida
2 cup Sugar
1 cup Melted Butter
Eggs
1 tspBaking powder
1/2 tsp Baking Soda
1/2 tspSalt
1 tbspVanilla extract 

Preparation:

  • Soak dry fruits and nuts in grape juice for minimum 1- 2 days
  • Make sugar caramel with 1/2 cup sugar and 1/4 cup water. 
  • Powder the spices with 1/2 cup sugar to a fine powder
  • Mix the wet ingredients - Egg, Vanilla, Caramelized Sugar
  • Add the dry ingredients and the soaked fruits with the Juice. 
  • Bake it at 350 F or 180 C for 45 minutes
  • Plum cake is ready to be served
  • It can be stored outside for 1-2 weeks

Important tips


  1. You can boil the dried fruit and candied fruit, strain and use immediately if running low on time.
  2. Alcohol can be substituted with any other dark grape juice or orange Juice.
  3. Use the best quality dried fruits available.
  4. Unglazed cakes can be shrink-wrapped and stored for up to one month in the fridge.
