BANANA NUT MUFFIN

It is yet another day to have a yummy muffin. If you are crazy like me watching food network you will also know about Paula deen, she is one of the chefs in food network who makes all relishing dishes. She used to start like "Hi y'all" (South) the way she communicates and makes dishes will be like flowing. When she does it it will look so easy, she does it in a way. She makes lots of recipe and i tried Banana Nut Muffin and the Cinnamon roll form her recipes.

Baking is so very new to me, i slowly started to explore new recipes and learning to excel in it. When i tried for the first time it was not actually easy, i wont get the correct softness or the cake wont raise. Banana Nut Muffin was my first attempt to make cake, and every time i make it the taste is getting better.

Then slowly friends started to ask for the recipe, that is the moment when a cook gets acknowledged. And i feel proud of what i made. My kids used to say when i make any baking, "Mom this is the best cake ever" That will make my day. End of the day it is all about kids.

 Banana Nut Muffins is a type of Bread, baked in small portions. Muffins are like cup cakes but lack of Frosting and sweetness. In cup cakes they add frosting and some sprinkles in the top but for muffins they dont. And also in Cupcakes they dont add nuts to it, but in muffins we add nut, raisins.

Kids will definitely just like love this Muffins!

Main Ingredients : All purpose flour & Banana

Ingredients :

Banana - 3 mashed

All purpose flour : 2 cups

Baking soda - 1/2 tsp

Salt - 1/2 Tsp

Sugar - 1 cup

Butter - 1 stick

Egg - 2 ( you can use substitute too)

Vanilla extract - 1 tsp

Chopped walnuts - 1 cup ( any nut)

Preparation :

  • First thing you have to do is, preheat the oven to 375 deg F. Because the oven should be hot enough when you put the batter inside.
  • Then take a large bowl, add the bananas to mash. It will really taste good when the banana is nice and ripe.
  • After you are done with the mashing, it is time to add butter, If the butter is in the room temperature will ad good texture to the cake. It is also ok if you melt it in the microwave.Mix well so it gets incorporated with the banana. 
  • When the eggs are done add little vanilla essence or if you are lucky enough to have vanilla bean you can scrape it and add to the liquid ingredients . Stir well. 
  • Now we can add sugar,  you can add regular white sugar or also brown sugar, and blend well.
  • Take another bowl and Sift Flour, salt and baking soda just to avoid lumps.
  • Now it is time to add the flour to the mashed banana mix. 
  • Add walnuts to batter and mix till it gets incorporated, Nuts are always optional, if you want to avoid, that's okay. Walnut will taste good in this muffin.
  • Now with a measuring spoon take the batter and pour to the muffin cups half filled. It is better to use measuring spoon because every muffin will be in the same size. So i always fill in the batter with the measuring cups.
  • Now the batter is ready to bake, The oven should be hot enough, so bake for 18 to 20 mins or till the toothpick comes out clean.
  • All golden color muffins are ready.. Yum !! Cool it, then serve it warm
