RASGULLA
Rasgulla is a cheese based syrupy sweet dish.

Main Ingredient : Milk
Ingredients :
Milk - 4 cups
Lemon juice - 2 tbsp with 1 tbsp water
Sugar - 1 & 1/2 cup
Water - 4 & 1/2 cup
Saffron
Preparation :
- Boil milk in a heavy bottom pan, in low heat. Keep stirring occasionally.
- When the milk starts boiling, reduce the heat and pour lemon juice to it. Little by little.
- It will start to separate. You will get whey water and the cheese.
- Then you have to filter the cheese in a cheese cloth. Hang it for few more mins to get all the water out.
- Then start to knead the cheese very good for 10 mins or even more till you get the dough consistency.(kneading is very important)
- Make into small balls as u want. A medium size will do.
- In between, you have to boil water with sugar in a pressure cooker.
- Now drop the balls in to it and close the lid. Pressure cook for 7 -8 mins or till 1 whistle.
- You can see the ball size doubled. Then it is done. Cool it and serve it cold.
