Kathrikai Capsicum Sambhar

Main ingredients : Kathrikai and capsicum
Ingredients:
Kathrikai/Eggplant - 1 cup cut
Thuvar dhal - 1/2 cup
Sambhar podi - 2 tbsp
Turmeric - 1 tbsp
Kayam a pinch
Coconut shredded - 2 tbsp
Curry leaves few
Tamarind paste - 1 tbsp
Oil - 2 tbsp
Vendhayam / Fenugreek - 1 tsp
Seasoning - 1 tbsp
Salt to taste
Preparation :
- In a pan, add oil. Add vendhayam and then the Egg plant and capsicum chopped.
- Saute well, and then add water to the pan with tamarind paste. Let it boil till egg plant and capsicum is cooked.
- Now you can add Sambhar podi and turmeric.
- Before you start, you have to pressure cook thuvar dhal with turmeric and a drop or oil. Till soft.
- Now to the pan you can add the cooked dhal, mix well. Add salt.
- Seasoning to be added.Grind some coconut with water and add to sambhar, will enhance the taste.
- Garnish with Cilantro.
Serve it hot with rice.
