Samba Rice Puttu
Samba is a special brown rice , which is rich in iron and other nutritive properties. This puttu is made quickly for evening time snack. Puttu is mostly done for Breakfast in Kerala with Kadala Curry, Plantain or Sugar and ghee.
I used store bought Puttu mix, you can make from scratch as well. It is made really quick and kids love it. My Kids like to have with sugar and ghee, which is very rich and filling. Kadala curry is a very authentic combo for Puttu in Kerala. My Kerala friends used to make them on weekends and will skip the lunch as it will be really filling and heavy. Traditional way of doing Puttu is by using Coconut shell. Where they used to make a hole and steam it by layering in the coconut shell. Now they have so many Puttu maker in market which achieve the same shape. Lets get started with the recipe...!
INGREDIENTS
- Samba rice Flour - 1 cup
- Sugar - 2 tsp
- Salt a pinch
- Coconut Grated - 1/2 cup
- Ghee - 1 tsp
Preparation:
- I used Store bought Puttu mix for making this Puttu, there are lot more brands available. I used Nirapara Puttu mix. Take 1 cup of Puttu mix in a mixing bowl
- Add a pinch of salt for taste.
- Add hot water to the mix little by little. So you don't make the mix watery.
- Keep sprinkling the water till you reach the consistency.
- When you hold the Puttu flour it will hold the shape, when you drop it looses the shape. Thats the perfect consistency. Always keep the mix covered with plate or wet tissue/towel
- I use the Charata(Coconut Shell) shaped Puttu maker. First layer will be coconut and then add 2 tbsp of Puttu mix
- Steam in the pressure for 1-2 mins. Don't over cook the Puttu
- Puttu can be served with Kadala Curry or Sugar & ghee
- Puttu is very quick and easy
