KUTTAN CHORU
It is a mixed vegetable rice. The name itself will describe. It is very much tasty and healthy too.

Main Ingredients : Rice and vegetables.
Ingredients :
Rice - 2 cups
Thuvar dhal - 1/2 cup
Potato - 2 cup peeled and cubbed
Eggplant - 1 cup cubbed
Plantains - 1 cup peeled and cubbed
Drum stick - 1/2 cup
Chilli powder - 2 tbsp
Turmeric - 1 tbsp
Tamarind paste - 2 tbsp
Green chilli - 10 nos (if you want it hot)
Small onions - 1 cup
Red chilli - 3 nos
Seasoning - 1 tbsp
Curry leaves few
Coconut shredded - 1/2 cup
Salt to taste
Preparation :
- In a pressure cooker with out vessel inside you should wash the thuvar dhal and add with little water to it. Little turmeric too.
- Keep stirring, let it half cook. Now you can add potatos to it.
- Now we can add all other vegetables with tamarind paste and a cup of water. Let it boil and cook a little.
- Now we can add washed rice to the pressure cooker. Then the chilli powder.
- Now in another pan, you can add little oil and the seasoning to it, with curry leaves, Chilli and small onions. Add to the rice.
- Add the shredded coconut to the rice.
- Close it with the lid. (water add upto 3 cups for 1 cup rice so around 7 cups) Keep stirring with intervals.
- In 25 mins, it will be ready. May be early too. so Keep checking.
Server it hot with Papadam or vathal.
