KHEER
Kheer is also a type of payasam. It is a south Indian sweet dish made with boiling rice and sugar. It is flavoured with raisins and nuts.

Preparation time : 10 mins

Cooking time : 40 mins

Course : Main

Main Ingredients : Basmati rice and milk

Ingredients :

Basmati rice - 1/2 cup

Full fat milk - 6 cups

Water - 1 cup

Chopped cahew - 2 tbsp

Cardamom powder - 1 tsp

Saffron - few

Sugar - 3 cups

Preparation :

  • Soak basmati rice for 1 hour.
  • Heat the pan, add milk and saffron. Let it com to boil.
  • Now wash the rice gently and add to milk. Keep stirring.
  • May be after half cooked you can add cashew to it. Then if needed little water.
  • Rice should cook in the milk, only then the taste will be good.
  • Add cardamom powder to the pan.
  • When the rice is cooked well. Add sugar to it.
  • It will turn to a mild pink color. Turn off the heat.
  • Cool it and then serve
  • Garnish with saffron (optional)
