PULIKUZHAMBHU

Kuzhambu is a stew based on the broth made with tamarind. The dish is very popular as a side dish for Rice in Southern regions of India. The number of varieties of kuzhambu is countless.

Course : Side dish

Main Ingredients : Garlic and Tamarind

Ingredients :

Tamarind - lemon size

Garlic - 10 nos (cloves)

Sesame oil - 5 tbsp

Seasoning - 1 tbsp

Kuzhambhu powder - 2 tbsp

Red chilli - 1

Curry leaves - few

Salt to taste

Preparation :

  • Soak tamarind in hot water for 5 to 10 mins
  • Heat the pan, add oil and then the seasoning.
  • Now add garlic, curry leaves and chilli. Saute well.
  • Now add tamarind water by squeezing tamarind.
  • Add kuzhambhu powder. Let it boil for 10 to 15 mins.
  • Till the oil separates, it should boil. Then reduce the heat and add salt.
Serve it with rice.
