RAJMA FRIED RICE

Main Ingredients : Rajma and Basmati Rice

Ingredients :

Rajma - Soaked and cooked 1 cup

Basmati rice - Soaked 2 cups

Onion - Chopped - 1 cup

Ginger and Garlic - 2 tbsp Chopped

Green Chili - Slit 5

Cloves - 2

Cardamom - 2

Cashew - 1/4 cups

Cinnamon - 1 stick

Bay leaf - 1

Coriander leaves

Star anise - 1

Jeera - 1 tbsp

Salt as needed

Preparation :

  • In a Pan, add little oil
  • When it is hot add Jeera, Star anise, Cardamom, Cinnamon, Bay leaf, cloves. Saute well
  • Add cashew to the pan.
  • Now when it is done, add onion and little salt. So it well cook fast.
  • Now add chili, ginger and garlic.
  • Add rajma and stir till blends well.
  • Now wash rice and add with 2 cups of water with salt.
  • Close it with lid. Keep the heat in medium low.
  • It will be ready in 30 mins, stir occasionally.
  • Garnish with Cilantro
Serve it hot with raita.
